Gregg Rapp: Menu Engineering @ Red Onion in Glasgow, Scotland

What an amazing journey it was to work with Chef / Owner, John Quigley and the BBC team to create a new menu for Red Onion in Glasgow, Scotland! On this project we used eye-tracking technology and my menu engineering methods to turn around a new menu nearly overnight.

The results were fantastic! We categorized the menu to make it easier to navigate and highlighted the items Chef John wanted to sell most, specifically his signature entrée, Monkfish Saltimbocca. In just one month after implementing the new menu, à la carte menu sales jumped by 11% and profitability made an even bigger jump.
